Tips for a stress-free Christmas
It’s easy for the hustle and bustle of Christmas to overwhelm us. There’s so much to do and so many gifts to buy. So, we asked our head chef for his tips to stay calm during the holiday season. (Especially when it comes to that Christmas dinner) He says:
- Be prepared. Make a list of everything you need to get and where you need to go. Keep to the list as best you can.
- Get organised. When you buy ingredients for Christmas dinner, keep it separate so you don’t accidentally use something up.
- Do everything you can one day in advance. Many dishes can be mostly-cooked the day before and finished on the day.

Ingredients
500g brussels sprouts (blanched and cut in half)
50g shallots, peeled and sliced
200g streaky smoked bacon, cut into 1-inch pieces
2tbsp Dijon mustard
Method
Add bacon to pan over medium high heat and cook till bacon is just starting to brown.
Add shallots and cook another 4-5 minutes.
Add brussels sprouts and cook another 5 minutes till sprouts start to brown on edges.
Drain off fat from pan and take off heat.
Add mustard and mix to coat.
Serve warm.
